Vegan, Nut Free Apple Crumble

It was my dad’s birthday this weekend and I wanted to make him a fairly healthy dessert without compromising on taste! His favorite is Apple Pie a la mode so I decided that an Apple Crumble would be right up his alley (since a gluten, dairy, soy, egg, nut free pie crust seemed a little daunting. One day I’ll be daring enough to try it out!) My dad has some blood pressure and cholesterol issues so I opted to use a lower glycemic sugar. I had previously found this coconut sugar at Whole Foods and this was the perfect opportunity to use it. It’s not as sweet as cane sugar but I wasn’t looking for anything too too sweet since the apples bring a lot of sweetness to this dish.

Vegan, Nut Free Apple Crumble

makes 14 servings

Organic and High Quality Ingredients

6 organic fuji apples

½ lemon, juiced

filtered water

½ cup coconut spread, plus more to grease the baking dishes (in replace of butter, can use coconut oil instead, just make sure it’s melted)

1 cup sweet rice flour

½ cup coconut sugar

½ Tbsp ground cinnamon

1. Preheat oven to 375° F. Peel and core apples and place them in the filtered water with lemon juice to keep them from turning brown.

2. Thinly slice apples and put back in lemon water.

3. Grease baking dishes with coconut spread. (I used 3 baking dishes.)

4. Mix sweet rice flour, coconut sugar and cinnamon in a large bowl.

5. Mix in ½ cup coconut spread into the flour mixture. Add more spread if desired. Should be in decent sized crumbly pieces (this is your crumble!!)

6. Fill apple slices halfway in baking dish and sprinkle on some of your crumble mixture.

7. Fill in apple slices all the way to the top.

8. Cover entire top of the apples with the crumble mixture

9. Place baking dishes in oven for 55 minutes or until the top is to desired crispiness.

10. Serve and Enjoy!

My family thought this recipe was pretty good considering it was allergy free! I would like to note that all 3 of them (dad, mom, sister) all covered theirs with some super dairy filled whipped cream! Overall it was a great substitution for a birthday cake and didn’t feel too healthy at all! A great indulgence without feeling too guilty! Happy birthday, dad!!!
