Butternut Squash Soup

Yesterday I started feeling a little under the weather and today I have a full blown cold.  Instead of trekking it all the way to Whole Foods, I decided to finally use the butternut squash I received in my Farm Fresh to You CSA box.  I love butternut squash but have never actually cut it myself.  I was a little intimidated so I’ve put this off.  But nothing sounds better than a steamy bowl of soup when you’re sick, so now’s the perfect excuse to use them! I will warn you that this makes quite a bit of soup so feel free to cut the recipe in half.  The full recipe will serve around 4-6 people.  

Butternut Squash Soup

Organic Ingredients:

2 medium butternut squash (peeled, seeded, cubed)

9 cloves garlic (chopped)

1 large yellow onion (chopped)

2 stalks celery (chopped)

5 small carrots (chopped)

2 qt. low sodium organic vegetable broth

olive or coconut oil


pea shoots

sunflower sprouts


smoked paprika

cayenne pepper

cracked pepper & salt to taste

1.  Peel your butternut squash.  

2.  Cut in half and scoop out seeds.


3.  Cube your butternut squash.  Don’t worry about making these pieces look pretty but keep in mind that the smaller your pieces are, the faster they will cook.  

4.  Heat olive oil or coconut oil in a large pot.  

5.  Add in garlic until golden


6.  Add in onions and celery until onions are translucent

7.  Add in vegetable stock, butternut squash and carrots and bring to a boil

8.  Lower to simmer until tender (~40 minutes)

9.  Blend to desired consistency.  I kept mine a little bit chunky but you can blend it until completely smooth.  You will also have to do this in multiple batches (unless you have a HUGE blender, in which case I am jealous)

10.  Transfer back into pot and heat until boiling.  

11.  Serve into bowls and sprinkle some seasoning on top!  I chose cayenne pepper, smoked paprika, cracked pepper and a little Maldon salt (definitely would recommend this combination).  I also added some sunflower sprouts which added a great crunch and a little green to the end result!
