As Quoted Cookbook Club - June Recap
June was a tough month to get everyone together. With the start of summer, we had a lot of cancelations at the last minute and ended up having a pretty intimate second meeting. But, it was great to be able to get to know the girls even better and get to catch up! This month we celebrated Hemsley + Hemsley: the Art of Eating Well. I've been following the Hemsley Sisters on instagram for a little while and really admire how they've created their empire from restaurants, to a plethora of cookbooks and social media following. All of their food looks delicious and they have a really approachable way of cooking. I love that their mission is to help other become more healthy with delicious food.
Two dishes made this month were the Courgetti Puttanesca (with Zoodles) and Puy Lentil, Beet, and Apple Salad.
We loved how light the salad was but still packed a big punch with all of the fresh herbs. The salad dressing was perfectly balanced and I almost didn't even realize there was no lettuce in this salad. The puttanesca was super light as well which is perfect if love pasta but don't want to end the meal feeling too heavy. The puttanesca was super easy to make and my son loved the leftovers that we brought home. I would definitely make this again!
Next month, I'm excited because it's Gjelina month! My sister can literally see Gjelina from her front porch in Venice. While I've never been to the actual restaurant before, we always stop at GTA and bring it back to my sister's place for a more kid-friendly atmosphere. A stipulation of hosting Cookbook Club at As Quoted is that everything must be gluten free to avoid cross contamination since the restaurant is a gluten free environment. Luckily for me, I'll finally be able to try some of these famous Gjelina dishes that I would otherwise have not been able to! Needless to say, I'm looking forward to our next meeting.
