AQ Cookbook Club - July Recap
I finally got to crack open the Gjelina cookbook and try some recipes featured! It was so hard to choose, especially from the beautiful photos of the seafood. My husband doesn't like seafood too much so I hardly cook it at home.
Mint Pistachio Pesto, Braised Sweet Corn, Chili, Cilantro, Lime, and Feta, Wild Rice Chorizo Soup, Roasted Yams & Honey, Mixed Lettuces with Yogurt Dressing & Garlic Croutons, Grilled Mackerel with Ginger, Garlic, Lime & Green Onion, Sardines Baked in Tomato-Pepper Sauce, Roasted Cauliflower, Broccolini and Turnips.
My favorite dish was the Mixed Lettuces with Yogurt Dressing & Garlic Croutons. Because this was made by Emily, who is vegan, the dressing was made with Kite Hill Almond Yogurt, but honestly I couldn't tell the difference. This was so simple but super flavorful!
